#MemoriesMonday

Happy Labor Day!

I’m reminiscing about my trip to Cali earlier this summer when I went up for my friends’ wedding.

Picture #1: My friends took me to Bar Louie for a late night dinner/happy hour in Northridge. We ordered this delicious dessert called the “key lime ‘shiner.” It’s cake , layered with strawberries, in a moonshine jar. Oh my goodness! That was so good! We really enjoyed it! And I loved how it was served in a jar. So creative! I loved the atmosphere and that it was somewhat busy on a late Tuesday night. The night is alive in Cali!!!

Picture #2: 805, Represent! I tried “805,” a local beer at the wedding rehearsal dinner. 805 is the area code for various cities in SoCal, including Ventura County. It was a pretty good ale! Excited that I tried something local!

Picture #3: Homemade dinner at the rehearsal! Yummy! My friends’ families made steak, Mexican rice, salsa, beans, and much more! It was awesome!!

My friends’ wedding was beautiful. I’m so glad I was a part of their special day! I hope to visit Cali again soon. I miss it there.

Oodles of noodles!

The other night, my boyfriend made fried noodles with slices of steak and assorted vegetables (green beans, red bell peppers, broccoli, carrots, and celery). It was a very simple and quick dish, made with a parmesan-garlic-butter sauce. It was really good! I enjoyed it very much. My bf told me the entire meal (enough for the two of us, and leftovers for me to bring for my home lunch the next day) costed him less than $20. Amazing deal, huh?

For Father’s Day this year, we made my dad homemade lasagna. We made two kinds: both with ground turkey, but one with arugula and the other with broccoli.

First time cooking with arugula. Yum!!!

Bam! This one was the winner! Lasagna with ground turkey and broccoli.

It’s been a long time since I last made lasagna. I forgot how simple it is to made! It’s all about layering and layering!

I first cooked the ground turkey with the Alfredo sauce and garlic (gotta have the garlic!). I layered the pan with the no-bake noodles (decided to try that) and the turkey-sauce mix, arugula/broccoli, and ricotta/mozzarella/pepper Jack cheeses, and repeated the steps until the pan was full. We topped the lasagna with shoestring fries before popping them into the oven. Yum! It was a yummy Father’s Day dinner!

Homemade Taco Tuesday dinner

It’s Taco Tuesday, baby! Let’s get excited! Whoot!

My sister and her BF cooked up a marvelous taco bar for my family on a Tuesday night for dinner. W.O.W.! It was amazing! We enjoyed dinner very much! We had a selection of different tacos to create and grind: soft or crunchy; ahi (fish), shrimp, ground beef, and steak. I tried ’em all, haha! My tummy was very satisfied!

Homemade taco nights at home are the best! I get SO excited. I literally do! Haha! I usually create a salad with tortilla chips or break my taco shells into pieces, and then add the ingredients. Yummy! My mouth is watering- every time I think of tacos! I think it’s time for another taco night soon! Hehe!

Enjoy your week!
