Homemade Taco Tuesday dinner

It’s Taco Tuesday, baby! Let’s get excited! Whoot!

My sister and her BF cooked up a marvelous taco bar for my family on a Tuesday night for dinner. W.O.W.! It was amazing! We enjoyed dinner very much! We had a selection of different tacos to create and grind: soft or crunchy; ahi (fish), shrimp, ground beef, and steak. I tried ’em all, haha! My tummy was very satisfied!

Homemade taco nights at home are the best! I get SO excited. I literally do! Haha! I usually create a salad with tortilla chips or break my taco shells into pieces, and then add the ingredients. Yummy! My mouth is watering- every time I think of tacos! I think it’s time for another taco night soon! Hehe!

And the Mexican food continues!

Over the weekend, I got together with my buds and we finally tried Egghead Cafe. Yesss! We’ve been wanting to go there for a long while. We had to wait a bit, but it was worth it!

I ordered the Mexican benedict, which consisted of: chorizo (sausage), sour cream, and verde (green Mexican sauce). Yummy! This is the first time I’ve ordered a “non-traditional” benedict. This was my first time having chorizo, too. I really enjoyed it! That sausage was tasty!

I would love to dine there again and try more dishes off their awesome menu! They have a pretty extensive drink menu as well!

Happy Cinco de Mayo weekend!

Happy belated Cinco de Mayo! On Thursday night, I made a Mexican breakfast dinner. It was a spur-of-the-moment meal idea, and it was delicious and quite awesome!!!

This is an over-easy egg sandwich, topped with Mexican cheese, on French toast. It was very good! The French toast wasn’t too sweet and paired very well with the egg. The yolk oozed out and we used the toast to soak it up.

I made the French toast a little differently. Here are the ingredients I’ve used:

  • milk
  • eggs
  • brown sugar
  • maple syrup

It turned out really yummy. I replaced the vanilla extract and cinnamon.

Mexican steak!!! I topped the steak with Mexican cheese, pico de gallo, salsa, and sour cream. Yummy!!
