Call me a cab, right away!

Finally got around to trying Yellow Cab Pizza Co. by the busiest Costco in the nation- the one at Iwilei (Honolulu location). Yay!

I ordered the aglio olio shrimp pasta, with garlic, olive oil, and sun-dried tomatoes. Yummy! The pasta was very light and super delicious. I can’t wait to try their other dishes, especially their pizza.

Easter & new beginnings!

Happy belated Easter! Hope everyone had a wonderful and blessed Easter weekend.

My relatives and I have a tradition of coloring eggs every Easter weekend. It never gets old. I always say that you’re never too old to color eggs! I just love it! It’s so much fun!

My family and I went to Assaggio’s at Ala Moana for our Easter luncheon this year. I had the mussels alla basil. That’s one of my favorite dishes to order!

Doesn’t this look amazingly delicious? Linguine pasta mixed with white wine butter sauce with garlic, basil, and mussels- ahhh! So good!

We had a NY cheesecake for dessert- yum! Sorry, I didn’t take a picture of our dessert. We just dove into it! Haha!

#tbt in Roma!

Almost 10 years ago, my travel gang and I went on a Mediterranean cruise that embarked from Rome, Italy. We visited the following countries: Sicily (Messina), Greece (Athens, Mykonos, and Santorini), Turkey (Kuşadası-Ephesus), and Italy (Naples). We returned to Rome where we disembarked and toured the city for a few days before heading back to the States.

It was my first international trip and I was beyond excited. There were so many awesome memories with new friends.

On our first night in Rome, we dined at Ristorante Aqua Pizzeria. I was super excited to try authentic Italian food, one of my favorites! I LOVE pasta!!

So guess what I ordered? Pasta, haha!

It’s seafood spaghetti! It was delicious! I wiped the dish clean! Pasta craving was definitely satisfied!

I also tried wine for the first time! Exciting! Even though I wasn’t 21 yet, I was legal in Europe!!! Yea! It was a white wine and was pretty good. Next to the wine, is water. They serve it “with gas” or “no gas.” Basically, carbonated or non-carbonated.

Auntie’s birthday dinner

This week, we celebrated my auntie’s bday. Dinner menu: rosemary/garlic/lemon zest lamb chops and round-and-round vegetarian pasta.

As my readers know, I love Giada! I was inspired by two of her dishes to make my auntie’s special birthday dinner: inspiration #1 and inspiration #2.

With inspiration #1, I made a rub using: rosemary, garlic, and lemon zest. The original recipe made with steak, minus the garlic.

My famous Greek yogurt sauce for the lamb, or any kind of meat, for that matter. I use Chobani Greek plain yogurt and season it with pepper and garlic salt. Yummy! I can eat this on its own!

Next up, is my “round-and-round” pasta. Because we had lamb, I didn’t add any meat to the pasta. I was ecstatic to use mascarpone cheese. Giada uses it all the time in her dishes. By itself, it doesn’t have much taste it to it. The taste  reminded me of ricotta cheese. Mascarpone is very hard to find. The only place I’ve seen it is at Safeway.

 

The other ingredients that were needed to make the sauce in addition to mascarpone were: orange juice, lemon juice, and lemon zest. I cut all the veggies in “round” shapes as that was the theme. Shallots, garlic, carrots, zucchini, and brussel sprouts made up this wonderful dish.

Yummy! The mascarpone cheese made a very light sauce. It was addicting to eat! Everyone loved it!

What a dinner!! Mission accomplished!
