Thee BEST soup/salad buffet ever!

I love Sweet Tomatoes/Souplantation. They are, hands-down, the BEST soup and salad buffet EVER! Their food is so good; so refreshing, and healthy.

It’s been several years since I last ate there, in California. I got to dine there recently in Arizona. My friends took me there when I went to visit them. Yay! I was so stoked! It was well worth it! The quality of the food never changed!

There were too many selections to choose from, so I took pictures of all the food- haha! It was overwhelming for sure! My top faves were the toss salad with pickles and red wine vinaigrette dressing, spicy cucumber quinoa salad, the garlic cheese bread, the blueberry muffins with honey-whipped butter, and the vanilla/chocolate soft serve frozen yogurt. Oh my gosh! My mouth is watering just thinking about it. I want to go back! I wish we had a Sweet Tomatoes here in Hawaii. I would be there ALL THE TIME!

Shanks, shanks, baby!

The other weekend, I was at the grocery store and saw some lamb shanks on sale. I love lamb, especially shanks. I hadn’t had it in a long time and decided to cook them for dinner. There’s so much meat and it’s so tender. This was a meal to savor!!!!

The shanks were very easy to cook. I drizzled them with extra virgin olive oil and lemon olive oil, and seasoned it with: lemon juice, Chardonnay white wine, Italian seasoning, thyme, Hawaiian salt, garlic salt, and pepper. I sliced some garlic cloves and threw them into the dish as well. Baked it in a casserole dish, covered with foil, at 400º for about an 80 minutes or so. The baking time varies, due to how rare you want the meat to be. I turned down the temperature and let the dish sit in the oven until it was ready to grindz!

I made a pasta dish to go alongside this delicious entrée. Got to have pasta! My all-time comfort food.

I used a mix of collard greens and spinach. I’ve never cooked with collard greens before and have been curious to finally try it. It’s very similar to spinach. It shrinks when cooked. Haha! Best to add it in last, as it cooks quickly.

I boiled egg noodles (love them to death!). The sauce included: Chardonnay white wine, lemon juice, and extra virgin olive oil. A very simple, and healthy sauce. Sprinkled with chili flakes and shaven Parmesan cheese. Yummy!

Oooh whee, I am getting hungry for lamb again! Is it time to eat?

Orzo bake!!!!

A couple weekends ago, I made a random dish with orzo pasta. I’ve never had orzo before and was curious to make this Greek Chicken Orzo Casserole dish by Betty Crocker. However, I, of course, changed the recipe, a tad bit. Ok, maybe by a lot! It turned out really delicious! I couldn’t stop eating it!!!!

BAM! Another success!

I altered the recipe:

  • 1 package (16 oz) uncooked orzo pasta
  • 1 can (14.5 oz) Muir Glen™ organic diced tomatoes, drained
  • 1 bag (5 oz) baby spinach
  • 8 oz feta cheese, crumbled- I used two 8 oz feta cheese containers
  • 1/4 cup olive oil
  • 1 tablespoon chopped fresh oregano leaves
  • 1/2 cup Progresso™ reduced sodium chicken broth (from 32-oz carton)- I used Swanson’s reduced sodium chicken broth
  • 1 lb chicken tenders, cut in 1-inch pieces (about 11 tenders) I used ground chicken and turkey
  • 1 teaspoon Greek seasoning I used authentic balsamic vinegar from ITALY!!! That was some thick vinegar!
  • 1 teaspoon finely grated lemon peel- I zested the lemon
  • 2 tablespoons sliced green onions

Finally got around to trying Yellow Cab Pizza Co. by the busiest Costco in the nation- the one at Iwilei (Honolulu location). Yay!

I ordered the aglio olio shrimp pasta, with garlic, olive oil, and sun-dried tomatoes. Yummy! The pasta was very light and super delicious. I can’t wait to try their other dishes, especially their pizza.

Easter & new beginnings!

Happy belated Easter! Hope everyone had a wonderful and blessed Easter weekend.

My relatives and I have a tradition of coloring eggs every Easter weekend. It never gets old. I always say that you’re never too old to color eggs! I just love it! It’s so much fun!

My family and I went to Assaggio’s at Ala Moana for our Easter luncheon this year. I had the mussels alla basil. That’s one of my favorite dishes to order!

Doesn’t this look amazingly delicious? Linguine pasta mixed with white wine butter sauce with garlic, basil, and mussels- ahhh! So good!

We had a NY cheesecake for dessert- yum! Sorry, I didn’t take a picture of our dessert. We just dove into it! Haha!

#tbt in Roma!

Almost 10 years ago, my travel gang and I went on a Mediterranean cruise that embarked from Rome, Italy. We visited the following countries: Sicily (Messina), Greece (Athens, Mykonos, and Santorini), Turkey (Kuşadası-Ephesus), and Italy (Naples). We returned to Rome where we disembarked and toured the city for a few days before heading back to the States.

It was my first international trip and I was beyond excited. There were so many awesome memories with new friends.

On our first night in Rome, we dined at Ristorante Aqua Pizzeria. I was super excited to try authentic Italian food, one of my favorites! I LOVE pasta!!

So guess what I ordered? Pasta, haha!

It’s seafood spaghetti! It was delicious! I wiped the dish clean! Pasta craving was definitely satisfied!

I also tried wine for the first time! Exciting! Even though I wasn’t 21 yet, I was legal in Europe!!! Yea! It was a white wine and was pretty good. Next to the wine, is water. They serve it “with gas” or “no gas.” Basically, carbonated or non-carbonated.
