Mother’s Day weekend grinds!

Happy Mother’s Day to all you mothers, grandmothers, and aunties out there! Hope your day is full of relaxation and happiness.

This weekend, my boyfriend, sis, her boyfriend, and I cooked dinner for my family, as we celebrated Mother’s Day last night. We made ground turkey pot pies, cornbreads, and strawberry butter. Yum!

I’ve made chicken pot pies from this recipe in the past, but we’ve altered the recipe last night. We used ground turkey, sweet potatoes, Okinawan sweet potatoes, and frozen mixed vegetables for the pie filling. It was very good. We used a lot of potatoes, which helped sweeten the flavor. It didn’t need much seasoning, like salt. The potatoes’ sweetness was a perfect substitute.

Next, we made strawberry butter and two different types of cornbread to pair with the pot pies.

We whipped a block of unsalted butter and strawberries to make the butter.

We used two recipes to make the cornbreads: left picture and right picture in animal shapes. Cute, huh?


Our feast!!! The filling made four pies- whoo hoo!

My cousin, who couldn’t make it last night, made my late auntie’s famous pound cake. O.M.Gosh! It was awesome! Tasted exactly like hers. He’s got her baking touch/gift! Yea!


Today, we had our Mother’s Day luncheon with my boyfriend and his family at his mom’s favorite restaurant, Palazzo!

A memorable Mother’s Day weekend- Repost!


Happy National Taco Day!

During Mother’s Day weekend, my sis and boyfriend created a taco bar for my aunties and cousin. It was awesome!!

Hope all you mothers, grandmothers, and aunts had a wonderful Mother’s Day weekend.

On Saturday evening, we celebrated Mother’s Day with my boyfriend’s family at Palazzo in Aiea. Palazzo is their family’s favorite restaurant, especially his mom’s. It’s a small Italian place. Very cozy, if you ask me.

I started off with their famous house salad. It was so refreshing! The lettuce was crisp, the pickled carrots were yummy, and that dressing. Oh my! Heaven! Their salad tastes very similar to Paesano and Assaggio’s. Just brings back great memories whenever I take every bite.

I ordered the fresh calms casino dish, small portion. Every time I go to Palazzo, my goal is to always try something new. This dish was so tasty! The sauce was amazing! I should’ve ordered the regular portion- haha!

We shared a bottle of the 2014 Ecco Domani Pinot Grigio wine. It was very smooth; light and crisp! It went perfect with my dish!

On Sunday, my sis, boyfriend, and I cooked a special Mother’s Day dinner for my aunts as well as my cousin. We decided to have a Mexican fiesta bar of tacos and burritos! Yeehaw!

On the left, I attempted to make homemade tortilla chips, using soft corn tortilla wraps. That was very popular- everyone ate it all! Success! I brushed olive oil on both sides of the tortilla before cutting them into triangles, then sprinkled salt. I baked them in a 350Β°F oven for 5-10 mins, depending. The key is to constantly watch them so they don’t burn.

We cooked two different kinds of Rice-a-Roni: Mexican and Spanish to have in the burrito or as a side. Turned out excellent, being it was the first time making this type of rice.

My family got to choose between shredded chicken or steak burritos or tacos/taco salad. Some chose one over the other, and some decided to try both! Our bar condiments consisted of: lettuce, tomatoes, raw onions, shredded Mexican cheese, sour cream, salsa, black beans, and refried beans. Whoo hoo!

Finally, we made homemade strawberry and blueberry margaritas. Yummy!

It was a busy, yet fun weekend! Very memorable indeed!
