A day of Thanksgiving!

Happy Thanksgiving, All! I wish you and your loved ones a blessed day to celebrate amongst yourselves, with food, joy, and laughter!

Just a preview of tonight’s menu… I was busy in the kitchen last night, cookin’ up some creamy mashed potatoes, blueberry/cranberry sauce, and prepping ingredients for the stuffing (which I will make tonight). My dad’s cooking the rest of the entrées: the big bird, ham, and yam. Mmm! This is the usual Thanksgiving dinner for my family and I. Not to mention the sides: dinner rolls, poke (raw fish), edamame (soy beans)…

I was inspired by The Pioneer Woman herself, Ree Drummond, to attempt making a different style of mashed potatoes this year. I added these three ingredients to make it extra rich, creamy, and special: half-and-half, whipping cream, and cream cheese. I don’t think I’m ever going back to making mashed potatoes like I used to. These three ingredients changed the texture of the dish! So good!

Here is the recipe! It’s so simple, and you can add more of these ingredients if you please! I never follow recipes to-the-tee!

Bam! There ya go! Creamy and rich! You can’t even taste the cream cheese (for those who don’t care for it).

Next, I made my blueberry/cranberry sauce. When I was growing up, I was always curious to know how fresh, homemade cranberry sauce is made. In the past, we had family friends make a container for us, or we would buy the canned sauce. NEVER AGAIN with the canned sauce- haha! It’s got to be fresh! A couple years ago, I finally decided to start the tradition in making my own sauce for the season. My family loved it; even those who didn’t like cranberry sauce.

I was inspired by two different recipes, but I stuck with this one: as simple as can be! All you need is cranberries, blueberries, sugar, and good ol’ OJ!

There ya go! So simple, yet so good!

Maybe next year, I’ll try spiking it??? Hehe! We’ll see. I should make two batches, in case the experimental one doesn’t turn out, haha!

Now, this is a fruit cake!

My sweet co-workers celebrated my boss’s and my birthday this week with an ono cake covered in fruits from Whole Foods. Whoo hoo! I appreciated their thoughtfulness so very much.

I love Whole Foods and this was the first time I tried their cake. The yellow cake was so moist; it just melted in your mouth. My goodness! Loved it so much! And those fruits that topped the cake was awesome! What an assortment! It sure made it look healthy, haha! Even the frosting that layered the cake had blueberries and strawberries mixed. Very creative!

I want to try more of Whole Foods’ cakes and other desserts. Yummy!

Going smoothie crazy with my newest food gadget!

It’s #WellnessWednesday, and I am so excited to share this post with y’all!!

Last Christmas, my boyfriend got me this multi-purpose Nutri Ninja®/Nutri Bowl™ DUO™ with Auto-iQ Boost™ (ooh, fancy, huh?). I finally started using it- three-and-a-half months later, haha!

My new food gadget consists of:

Wow! It’s an all-in-one blender and food processor, if you ask me! I can just use this one base to make my drinks and food!

For the past two weeks, I’ve gone crazy making all different kinds of smoothies. The featured image above is a carrot-strawberry smoothie, with the “Essential” flavor Vitamin Water® drink.

Here’s a list of the different (protein) smoothies I’ve made with my new gadget. It’s truly amazing!! It’s so easy to use and I can make multiple batches to last an entire week!

The ingredients in these smoothies are adjusted by your taste buds =D

Apple-banana smoothie:

  • Apples
  • Bananas (frozen ok)
  • “Essential” flavor Vitamin Water® drink
  • Ice (optional. I use ice to make my drinks colder and slushy)
  • Unflavored protein powder (optional)

Strawberry-banana-blueberry smoothie:

  • Strawberries (frozen ok)
  • Bananas (frozen ok)
  • Blueberries (frozen ok)
  • Soy milk and/or regular milk (you can use fruit juice if you prefer)
  • Ice (optional)
  • Unflavored protein powder (optional)

Peanut butter-banana-grape smoothie:

  • Bananas (frozen ok)
  • Grapes (frozen ok)
  • Soy milk and/or regular milk (I use both- I use lactaid milk since I am lactose-intolerant)
  • Peanut butter
  • Ice (optional)
  • Unflavored protein powder (optional)

Carrot-strawberry smoothie (yes, carrots):

  • Fresh carrots (fresh carrots frozen ok)
  • Strawberries (frozen ok)
  • Any kind of orange juice (I used the “Essential” Vitamin Water®)
  • Ice (optional)
  • Fiber powder (optional)
  • Unflavored protein powder (optional)

Carrot-strawberry-banana-blueberry smoothie:

 

  • Fresh carrots (fresh carrots frozen ok)
  • Strawberries (frozen ok)
  • Soy milk and/or regular milk (or fruit juice if you prefer)
  • Ice (optional)
  • Fiber powder (optional)
  • Unflavored protein powder (optional)

Carrot-apple-banana-blueberry smoothie:

  • Fresh carrots (fresh carrots frozen ok)
  • Apples
  • Bananas (frozen ok)
  • Blueberries (frozen ok)
  • Soy milk and/or regular milk (or fruit juice if you prefer)
  • Ice (optional)
  • Fiber powder (optional)
  • Unflavored protein powder (optional)

The blender did a fine job blending the carrots well into the smoothie, with the other ingredients because of the auto-iQ boost™ feature. If you like your smoothies with more texture and “grittiness,” you can turn the feature off.

I can’t wait to incorporate different veggies and fruits together to create more yummy smoothies. It’s not just about the fruits these days! Veggies are included, too!
