Quick & Easy Zesty Marinated Olives

This recipe was fun, simple, and fast to make. It was one of my favorite assignments in culinary school. The result after a day of marinating these olives was refreshing and tasty. It’s the perfect Mediterranean mezze (appetizer).

Marinated Olives Recipe

Yields: 2 cups

  • 1/4 cup organic extra virgin olive oil
  • 2 tablespoons organic red wine vinegar
  • 5 bay leaves
  • 2 organic garlic cloves, thinly sliced
  • Strips from the rind of an organic lemon 
  • 1 tablespoon fresh organic thyme, chopped
  • 1 teaspoon fresh organic rosemary, chopped
  • 1/2 teaspoon organic fennel seeds
  • 2 cups organic green olives

Kitchen Equipment

  • Measuring bowls, cups, and spoons
  • Mixing bowls/cups/spoons for mise en place ingredients
  • Cutting board
  • Chef knife
  • Mason jar
  • Saucepan
  • Airtight jar/container

Production Steps

  1. Sanitize the kitchen (sink, countertops, stovetop/oven, cupboard handles, phone, computer).
  2. Mise en place ingredients.
  3. Over low heat, combine the oil, vinegar, bay leaves, and garlic in a small saucepan.
  4. Remove from heat and add the lemon rind and herbs.
  5. Place the olives in a wide-mouth Mason jar.
  6. Pour in the olive mixture.
  7. Cover and shake the jar.
  8. Refrigerate for two hours or up to two weeks.
  9. Frequently shake the jar to coat the olives.

  7. Kalamata olives are considered a superfood.
