In For a Treat: Two Fresh Salsa Recipes

Two Salsa Recipes

Fresh salsa always tastes best. And it’s healthier. There are no added preservatives to keep the freshness.

In culinary school, I had the privilege of making several salsas during Mexican Cuisine Week. It was a lot of fun. You’re in for a treat because I’m sharing two today. 

Salsa Fresca Recipe

Yields: 1 pint

  • 1/2 cup organic yellow onions, chopped
  • 1/2 cup organic Roma tomatoes, chopped
  • 2 organic Serrano peppers, seeded, destemmed, and chopped
  • 2 tablespoons fresh organic lime juice
  • 1 organic cilantro, chopped
  • Kosher salt, to taste
  • Organic black pepper, to taste

Salsa Tatemada Recipe

Yields: 1 pint

  • 4 tomatoes
  • 2 Serrano peppers, seeded and destemmed
  • 1 yellow onion
  • Garlic cloves, peeled
  • 2 tablespoons cilantro, chopped
  • Kosher salt, to taste 
  • Black pepper, to taste

Kitchen Equipment 

  • Mixing bowls/cups/spoons for mise en place ingredients
  • Colander
  • Blender
  • Chef knife
  • Cutting board
  • Rubber spatula
  • Juicer reamer
  • Bowl
  • Pan
  • Tongs
  • Blender

Salsa Fresca Cooking Instructions 

  1. Sanitize kitchen (sink, countertops, stovetop/oven, cupboard handles, smart devices, and computer).
  2. Wash and chop the tomatoes, serrano peppers, and cilantro.
  3. Destem and remove seeds from the peppers.
  4. Chop the onions.
  5. Juice the lime.
  6. Mise en place ingredients.
  7. Place the tomatoes, onions, and peppers in a blender.
  8. Pulse and avoid turning the tomatoes orange.
  9. Add the contents to a bowl and mix the lime juice and seasonings.
  10. Garnish with cilantro.

Salsa Tatemada Cooking Instructions

  1. Turn the oven on to the broil setting.
  2. Wash the tomatoes, serrano peppers, and cilantro.
  3. Destem and remove seeds from peppers.
  4. Peel the garlic cloves.
  5. Chop the cilantro.
  6. Juice the lime.
  7. Mise en place ingredients.
  8. Place the tomatoes, onions, and peppers in a pan.
  9. Put the vegetables in the oven to char.
  10. Remove from the oven and cool to room temperature.
  11. Place charred vegetables in a blender.
  12. Blend until desired consistency.
  13. Season to taste.
  14. Garnish with cilantro.
