Impressive Mushroom Pâté Appetizer Spread

I was amazed after I made this dish. It wasn’t too appetizing to the eye, but it was delicious. Let’s get right into it.

Mushroom Pâté Recipe  

Yields 12 ounces

  • 2 tablespoons organic unsalted butter
  • 3 tablespoons organic extra virgin olive oil
  • 2 organic garlic, chopped
  • 1 organic shallot, chopped
  • 1 pound organic fresh button mushroom and dried shiitake mushrooms (rehydrated)
  • 3 tablespoons dry sherry wine
  • 1 tablespoon cream cheese
  • ½ cup organic fresh Italian parsley, chopped
  • Kosher salt, as needed
  • Organic black pepper, as needed
  • Crushed red pepper, pinch

Kitchen Equipment

  • Mixing bowls/cups/spoons for mise en place ingredients
  • Measuring spoons
  • Skillet
  • Wooden spoon
  • Food processor
  • Cutting board
  • Chef knife
  • Colander
  • Jar or airtight container

Cooking Instructions

  1. Sanitize the kitchen (sink, countertops, stovetop/oven, cupboard handles, phone, computer).
  2. Soak shiitake mushrooms overnight. Drain the mushrooms.
  3. Rinse parsley and chop.
  4. Chop garlic and shallot.
  5. Mise en place ingredients.
  6. Add butter and 2 tablespoons olive oil in a skillet.
  7. Add garlic and shallots and cook for five minutes until they are softened.
  8. Add crushed red pepper and cook for one minute.
  9. Add mushrooms and the remaining olive oil.
  10. Increase to medium heat.
  11. Continue cooking for 6-8 minutes.
  12. Stir occasionally until the mushroom liquid is almost evaporated.
  13. Add sherry, salt, and pepper.
  14. Cook for 10 minutes until the liquid is evaporated.
  15. Remove from the heat and cool.
  16. Transfer the mushroom mixture to a food processor.
  17. Add parsley and pulse until finely chopped.
  18. Add cream cheese and pulse.
  19. Refrigerate overnight before serving on toasted bread or crackers.
