Impressive Mushroom Pâté Appetizer Spread

I was amazed after I made this dish. It wasn’t too appetizing to the eye, but it was delicious. Let’s get right into it.

Mushroom Pâté Recipe & Kitchen Equipment 

Yields 12 ounces

  • 2 tablespoons unsalted butter
  • 3 tablespoons olive oil
  • 2 garlic, chopped
  • 1 shallot, chopped
  • 1 pound fresh button mushroom and dried shiitake mushrooms (rehydrated)
  • 3 tablespoons dry sherry wine
  • 1 tablespoon cream cheese
  • ½ cup fresh Italian parsley, chopped
  • Kosher salt, as needed
  • Black pepper, as needed
  • Crushed red pepper, pinch
  • Mixing bowls/cups/spoons for mise en place ingredients
  • Measuring spoons
  • Skillet
  • Wooden spoon
  • Food processor
  • Cutting board
  • Chef knife
  • Colander
  • Jar or airtight container

Cooking Instructions

  1. Sanitize kitchen (sink, countertops, stovetop/oven, cupboard handles, phone, computer).
  2. Soak shiitake mushrooms overnight. Drain the mushrooms.
  3. Rinse parsley and chop.
  4. Chop garlic and shallot.
  5. Mise en place ingredients.
  6. Add butter and 2 tablespoon olive oil in a skillet.
  7. Add garlic and shallots and cook for five mins until they are softened.
  8. Add crushed red pepper and cook for one min.
  9. Add mushrooms and the remaining olive oil.
  10. Increase to medium heat.
  11. Continue cooking for 6-8 minutes.
  12. Stir occasionally until the mushroom liquid is almost evaporated.
  13. Add sherry, salt, and pepper.
  14. Cook for 10 minutes until the liquid is evaporated.
  15. Remove from the heat and cool.
  16. Transfer the mushroom mixture to a food processor.
  17. Add parsley and pulse until finely chopped.
  18. Add cream cheese and pulse.
  19. Refrigerate overnight before serving on toasted bread or crackers.

I learned about functional mushrooms. They’re types of fungi that are the bearer of health benefits beyond their nutritional compositions. These mushrooms are categorized into two main groups: medicinal and adaptogenic.

Medicinal mushrooms prevent the damaging process of oxidation and kill harmful cells. While these mushrooms may provide therapeutic advantages, it’s crucial to recognize that they’re considered dietary supplements, which means they’re regulated by the Food and Drug Administration (FDA) as food, not drugs.

Adaptogenic mushrooms contain adaptogens, compounds that aid bodies in improving and fighting off chemical, biological, and physical stress. For instance, rather than relieve a cough or get rid of the inflammation that’s causing a headache, adaptogens help our bodies’ stress response system function as they should.
