Holiday Peanut Butter Butter Cookies
Classic Family Recipe
The holidays are among us. I’ve recreated a classic family holiday recipe that my late paternal grandfather created. It’s our butter cookies. Gramps was a baker. Back in the day, he used to bake these cookies for our family. Over the years, the recipe was passed to my late aunt (the eldest daughter in the family). When I was growing up, the recipe was passed down again to my late grand-aunt, who took over and baked these delicious cookies every holiday season.
After everyone passed, the recipe was nowhere to be found for a few years. After some cleaning, I found the recipe. However, it was just an ingredient list. There were no cooking instructions. Thus, I took matters into my own hands and recreated the cookie recipe. I added my own twist to it and made it my own. While it doesn’t taste exactly like my late grand-aunt’s, my family and I have come to enjoy this new recipe. It even has a new name- peanut butter butter cookies.
Recipe & Kitchen Equipment
Yields: 20-40 cookies, depending on the size of the cookies.
- 1.5 cups organic peanut butter powder (PB Fit)
- 5 cups almond flour (or unbleached flour)
- 1 3/4 cups organic raw cane sugar
- 3 organic cage-free eggs
- 1.5 pounds unsalted Lucerne (Safeway brand) sweet cream butter, room temperature
- 1 teaspoon baking soda
- 1/4 teaspoon Kosher salt
- Measuring bowls, cups, and spoons
- Mixing bowls/cups/spoons for mise en place ingredients
- Cookie dough scooper
- Mesh strainer (for sifting)
- Baking sheets
- Parchment paper
- Cooling racks
- Airtight container
- Sanitize kitchen (sink, countertops, stovetop/oven, cupboard handles, phone, computer).
- Preheat oven to 350ºF.
- Mise en place ingredients.
- Sift dry ingredients into a large mixing bowl.
- Add wet ingredients.
- Mix ingredients together.
- Line baking sheets with parchment paper.
- Use a cookie dough scooper to scoop dough onto the baking sheet.
- The dough will expand when baking, so best to make the dough balls about a tablespoon in size.
- Place the dough-filled baking sheet into the oven.
- Bake between 10-12 minutes or until golden brown.
- Remove from the oven and transfer to cooling racks to cool.
- After they’ve cooled, store the cookies in an airtight container.
