What is Raita?
Raita is an Indian yogurt condiment that reminds me of tzatziki, a Mediterranean yogurt sauce. Raita can be paired with any Indian dish, like curries and naan. It’s simple and quick and oh-so-delicious!
Raita Recipe
- Organic plain Greek yogurt
- Small organic cucumber, peeled and grated
- Organic lemon, zested and juiced
- Organic ground cumin
- Kosher salt
- Organic black pepper
- Organic mint, chopped
Kitchen Equipment
- Measuring bowls, cups, and spoons
- Mixing bowls/cups/spoons for mise en place ingredients
- Cutting board
- Chef Knife
- Vegetable peeler
- Grater
- Microplane
- Juicer reamer
- Spatula
- Glass bowl
- Paper towels
- Airtight container
Cooking Instructions
- Sanitize the kitchen (sink, faucets, countertops, stovetop/oven, cupboard handles, smart devices, computer, etc.).
- Wash cucumbers, peel, and grate.
- Place cucumbers in paper towels and squeeze the excess liquid.
- Wash, zest, slice, and juice lemon.
- Wash and chop mint.
- Mise en place ingredients.
- Add the yogurt, lemon zest/juice, and spices to a mixing bowl.
- Add in the cucumber after all the excess liquid is squeezed out.
- Taste and season as needed.
- Pour raita into an airtight container.
- Raita can be kept for up to a week in the refrigerator.
